The object
The famous yellow peaches of Calanda, grown on trees that carry paper bags over each fruit so the flesh ripens slowly and stays pale gold. We simmer them whole, peel included, until the preserve smells like the orchard in July.

Calanda, Aragón. Whole fruit from organic orchards, cooked gently without added sugar.
Craft
Peel included, simmered slowly until the water leaves and the flavour concentrates. No sugar, no syrups, no pectin.
