The object
An oil the colour of a shaded meadow. The avocados are grown on the Axarquía coast east of Málaga, where the Mediterranean softens the winter. They are picked only when fully ripe, their flesh is separated from stone and skin, and the pulp is cold-pressed — no heat, no solvents. The oil that emerges is deep green, dense, almost buttery.
Origin
Axarquía, Málaga province. Hand-picked at full ripeness. A cooperative of small groves on the foothills above the sea.
Craft
De-stoned by hand. Pulped gently. Cold-pressed below 40°C. Decanted naturally. Bottled in dark glass to protect the chlorophyll.
Tasting notes
- Nose
- freshly cut grass, ripe avocado flesh, a hint of young walnut.
- Palate
- buttery, round, vegetal — like an avocado at its peak, concentrated.
- Finish
- soft, nutty, without bitterness.
Suggested use
- Drizzle over a poached egg on dark toast.
- Finish a carpaccio of beetroot or sea bream.
- Whisk into a mayonnaise for a greener, silkier result.
- Stir through warm grains at the last moment.
- Serve raw — its character belongs at room temperature.
