Chupadedos Olives
Small, crisp, Andalusian · 280 g
The object
The name means "finger-licker" — the olive you eat one at a time and then cannot stop. Small, firm, crackingly crisp, dressed with a little oregano and a whisper of garlic. Brined over weeks in the old Sevillian manner, without lye shortcuts.
Origin
Seville province, Andalusia. Autumn harvest.
Craft
Hand-sorted. Cured in salt brine over several weeks. Dressed with herbs. Jarred in their own brine.
