The object

The olive Spain gave the world. Round, pale green, firm but giving — the Manzanilla is the table olive against which others are measured. Ours are from the groves around Seville, brined slowly, and kept whole with the stone.

Origin

Seville province, Andalusia.

Craft

Hand-sorted at harvest. Brined in the traditional Sevillian style over several weeks. Jarred whole in brine.

Tasting notes

Nose
fresh brine, green leaf.
Palate
buttery, rounded, with a gentle bitterness.
Finish
long, clean, saline.

Pairing

  • With a cold fino sherry.
  • Beside a slice of tortilla.
  • In a dirty martini.
  • Stuffed with an anchovy on a toothpick.
  • At room temperature, not straight from the fridge.
