Origin

Jaén, eastern Andalusia. Early October harvest. Third-generation family grove of Picual olives.

Craft

Hand-sorted at dawn. Milled within six hours. Cold-extracted at 24°C. Settled by gravity. Bottled in dark glass.

Tasting notes

Nose
green grass, artichoke, a quiet mineral note.
Palate
round at first, then bright — green almond, fresh tomato leaf, a clean bitterness.
Finish
long, peppery, warming — the mark of a good Picual.

Suggested use

  • The everyday oil for a Spanish kitchen.
  • Finish soups at the table, not in the pan.
  • Pour generously over ripe tomatoes and flaked salt.
  • Baste roasted vegetables in the last five minutes.
  • Keep within arm's reach of the stove.
