Origin
Jaén, eastern Andalusia. Early October harvest. Third-generation family grove of Picual olives.
Craft
Hand-sorted at dawn. Milled within six hours. Cold-extracted at 24°C. Settled by gravity. Bottled in dark glass.
Tasting notes
- Nose
- green grass, artichoke, a quiet mineral note.
- Palate
- round at first, then bright — green almond, fresh tomato leaf, a clean bitterness.
- Finish
- long, peppery, warming — the mark of a good Picual.
Suggested use
- The everyday oil for a Spanish kitchen.
- Finish soups at the table, not in the pan.
- Pour generously over ripe tomatoes and flaked salt.
- Baste roasted vegetables in the last five minutes.
- Keep within arm's reach of the stove.
