Where the extra virgin is made to be tasted, this bottle is made to cook. It sears without smoking, it roasts without bitterness, it carries other flavours without ever overshadowing them.

Origin

Málaga province, Axarquía coast. Same groves as the extra virgin.

Craft

Cold-pressed, then gently refined — without solvents, without bleaching agents — to raise the smoke point and stabilise the oil for cooking. Nothing is added.

Tasting notes

Nose
neutral, faintly warm, a trace of nut.
Palate
round, clean, almost weightless.
Finish
short and tidy — the mark of a good cooking oil.

Suggested use

  • Sear a rib-eye over high heat without fear.
  • Roast root vegetables until their edges caramelise.
  • Deep-fry tempura — it lets the ingredient lead.
  • Replace any neutral seed oil, permanently.
  • Keep beside the stove, not on the table.
