The object

The sauce a Spanish grandmother would make on a Sunday — if she had all day. Whole organic plum tomatoes from Vegas Altas, peeled, seeded, then cooked for hours in a copper pan with a single thread of our own olive oil and a pinch of sea salt. No concentrates, no starches, no sugar. It is what a tomato becomes when it is given time.

Origin

Vegas Altas, Extremadura. Summer harvest of organic plum tomatoes.

Craft

Peeled and seeded by hand. Reduced slowly over four hours. Finished with cold-pressed olive oil. Jarred hot.

Tasting notes

Nose
ripe tomato, faint basil shadow.
Palate
round, savoury, deeply fruited.
Finish
clean acidity, long.

Pairing

  • Over hand-cut pasta with nothing but olive oil and Parmesan.
  • As the base of a shakshuka.
  • Spooned on grilled bread.
  • The starting point of a braise.
  • Warmed gently, never boiled.
