The object

The house tomato sauce, dressed for the evening. The same plum tomatoes, the same long cook — and then a handful of Mediterranean herbs from the kitchen garden and a careful whisper of Spanish smoked paprika. The result is darker, warmer, a little more southern.

Vegas Altas, Extremadura (tomatoes); estate-grown herbs.

Craft

Cooked four hours in copper. Herbs added in the final thirty minutes so their oils survive the heat.
