The object
Not a sauce — a drink, a soup, a summer afternoon. We build it the old Andalusian way: ripe raw tomatoes, cucumber, green pepper, a piece of yesterday's bread, garlic, our own extra virgin olive oil, a splash of sherry vinegar. Blended cold, never cooked, bottled the same day.
Origin
Andalusian recipe. Tomatoes from Extremadura, peppers and cucumber from Almería.
Craft
Raw ingredients, cold-blended within hours of harvest. No preservatives; shelf-stable through high-pressure processing, not heat.
Tasting notes
- Nose
- ripe tomato, cucumber skin, a trace of garlic.
- Palate
- bright, herbaceous, round.
- Finish
- cool, slightly sharp, refreshing.
Pairing
- Served cold in small glasses before lunch.
- As the base of a summer bowl with diced avocado.
- Poured around a plate of grilled prawns.
- With a thread of olive oil and a grind of pepper.
- Never warmed.
